Wild Rice and Creamed Spinach
Serves 4
1 cup uncooked long-grain rice
2 cups Vegetable Stock (Organic)
3 teaspoons Cold Pressed Oil
½ cup Wild Rice
½ cup Chopped Onions
1 cup sliced Celery
1 cup sliced Mushrooms
2 teaspoons chopped fresh thyme
1 cup torn spinach
½ cup soy or rice milk
Pinch of salt
Cook the long grain rice in the stock & drain.
Heat the oil & sauté both rice’s with the onions, celery, mushrooms & thyme until the onions are clear. Combine the spinach, soy milk with a pinch of salt & puree in the blender. Pour over the rice mixture.
This is dish has a beautiful herby color & presentation.
